Coffee Roasting: Turning Green Beans into Aromatic Goodness

The roasting process starts with green coffee beans which are heated to high temperatures and undergo chemical changes. As the beans roast they develop complex flavors and aromas and go from raw, vegetal notes to the rich, nuanced flavors we love. The duration and temperature of the roast has a big impact on the final taste profile. Lighter roasts preserve more of the bean’s natural acidity and fruit notes while darker roasts bring out deeper, more robust flavors.

Roasting is a fine balance; too little time and the coffee will taste underdeveloped and sour, too much time and it will be bitter and lose subtle flavors. Expert roasters use their senses – sight, smell and sound – to determine the perfect roast level for each batch of beans to ensure consistency and quality.

Coffee Packaging: Preserving Freshness and Flavor

Once roasted, Kona coffee beans start to lose their freshness as they are exposed to air, light and moisture. Proper packaging is key to preserving the flavor and aroma that has been developed during roasting. Packaging involves sealing the roasted beans in airtight bags, often with one-way valves that allow gases to escape but not air to get in. This keeps the coffee fresh for as long as possible.

There are different packaging options available – vacuum sealed bags, nitrogen flushed packaging, resealable bags with zip locks. Each has its own advantages but the goal is always the same – to protect the coffee from environmental factors that can degrade its quality.
